Mexican Martini – a Special Keto Margarita
Texas summers are scorchers. When it’s 6 pm and the thermometer still registers 100 degrees, a cold cocktail is a must. Before keto, my go-to was an ice-cold pilsner during the dog evenings of summer. Low carb beers are just fine, but sometimes I need a keto margarita – not just any margarita, but a low carb version of a local favorite called the “Mexican martini”. This delicious cocktail is a variation of a margarita on the rocks.
Key Ingredients
Green olives: Green olive juice adds just the right amount of brine to round out the sweetness and tang. It is typically served straight up in a martini glass garnished with a green olive or two. This recipe serves two; however, locals are known to forego the martini glass and simply drop a straw directly into the ice-laden shaker. If you’ve got some time and are extra thirsty, go for it!
Tequila and Topo Chico: In addition to tequila and green olive juice, Mexican martinis typically contain cointreau and lemon-lime soda. My keto-friendly version swaps the lemon-lime soda with another local favorite, Topo Chico sparkling mineral water. Any sparkling mineral water will do. Or, if you are in a pinch, substitute club soda.
A few other substitutions: Reposado tequila adds depth, but if you only have a “blanco” or “silver”, feel free to substitute for the Reposado. Just make sure it is the best tequila you’re comfortable purchasing. Finally, I prefer to serve in coupe or highball glasses simply because I am too klutzy for martini glasses.
Pairing Recommendations
Serve this tasty drink alongside tacos, fajita and greens salad, and other lighter dishes. It is a very flavorful beverage, and it will be the star of your meal or party. This keto Mexican martini is fantastic with Keto Queso and Fajita Chicken al Carbon!

- 2 oz Tequila - Blanco or Silver
- 1 oz Tequila - Reposado preferred, but feel free to substitute with blanco or silver tequila
- 2 Limes, juiced
- 2 tsp Green olive juice
- 1/2 tsp Orange extract
- 3 oz Topo Chico or other sparkling mineral water
- 10 drops Liquid Stevia to taste
Ingredients

- Fill cocktail shaker 1/2 full of crushed ice
- Add liquid ingredients
- Shake until combined
- Using strainer, pour mixture into glass of your choice
- If desired, drop one green olive into bottom of glass
