Ingredients

Parmesan is ok to substitute
Instructions
In a large bowl, mix together: 1 lb Chorizo ½ tsp black pepper ½ tsp Turmeric 2 tbsp Parsley ½ tsp Cumin 1/2 tsp dried Oregano
Add 1 Egg and 1/2 cup Cotija cheese and combine thoroughly
In a large non-stick skillet, add 2 tbsp. avocado or similar oil and turn heat to medium-high
While skillet is heating, form 1″ meatballs.
Drop meatballs one-by-one into skillet and cook until bottom is browned, about 3 minutes.
Turn meatballs over, turn heat to medium-low, and cover skillet with lid or aluminum foil.
Let cook for 10 minutes on medium-low. Remove from pan and let rest on paper towels for 3 minutes before serving.
