Not looking forward to that boring mid-week dinner? If you’re staring down leftovers or a hum-drum meal, this crispy “fried” asparagus dish will add some elegance and excitement. With only 5 minutes preparation time and a nice helping of ghee, it’s also a fantastic low-carb, high-fat side dish.
The key is searing the asparagus in enough ghee over medium-high heat. This method delivers an al dente texture and a nutty crunch. The tips and edges should be about 1/3 browned and 2/3 green. Serve “as is”, or add a little lemon zest before serving for additional flavor. It looks beautiful, too.
When I find asparagus for a great price, I buy enough for leftovers. Because they are al dente, extras can be refrigerated and added to tomorrow’s salad or omelette…keeping things interesting!

- 2 tbsp Ghee
- 1/2 lb Asparagus
- 1/2 tsp lemon zest
- Salt, to taste
- Pepper, to taste
Ingredients

- In a skillet, heat 2 tbsp. ghee on medium-high heat
- Add 1/2 lb. fresh asparagus
- Sear asparagus 2-3 minutes per side until tips are crispy and stalks are about 1/3 browned and 2/3 green
- Remove from heat and serve. Optional - add a bit of fresh lemon zest and serve with a wedge of lemon.
